Tony Chan: Restaurant Manager

One of the capital's most experienced and accomplished restaurant managers, Tony arrives at Chinese Cricket Club from the Michelin-starred Haiku in London's Mayfair. As General Manager he was responsible for overseeing a team of 32, as well as helping to develop new dishes. Promoted from Assistant General Manager in 2008, he helped increase turnover by 18%. Prior to Haiku, Tony worked as Restaurant & Bar Manager for Cella Lounge in London and spent three years as Restaurant Manager for the Royal China Group International. The latter involved working not only at the award-winning Royal China in London, but at the legendary Raffles Hotel in Singapore.
